Ex est. chef serves up strawberry matcha lattes & to-die-for cruffins at new bakery & café

Former fine dining chef Max Bean is making the carb-loaded, sugar-coated, custard and cream-filled dreams of Sydneysiders come true in the most delicious way at his sleek new artisanal bakery and café, Frenchs Fair in Frenchs Forest on the Northern Beaches.

Along with his seasoned hospitality wife Vicki, Max dishes up incredible creations, from TikTok-worthy takeaway Iced Strawberry Matcha Latte made with high grade Uji matcha (inspired by a recent trip to Japan) and Raspberry & Custard Cruffins, to picture-perfect dine-in dishes like Fresh Peach, Honey & Lemon Thyme Toast with whipped ricotta served on housebaked sourdough, and a towering Reuben Sandwich made with Wagyu pastrami.

Prior to opening the playground of pastries that is Frenchs Fair in April 2024, the young duo ran popular Calla Pyrmont, before which Max worked as a chef at fine dining restaurants Est. and The Bridge Room, while Vicki has worked in kitchens and front of house at restaurants including Bar Topa, Son Of Frank and Palings.

Drawing on their combined culinary experiences, the local Roseville couple bring together Frenchs Fair’s unique mix of over-the-counter 100% sourdough bread, pastries, fluffy focaccia sandwiches, stunning cakes and coffee, alongside a creative café menu of fresh produce-packed breakfast, brunch and lunch dishes, designed to enjoy in their stylish but casual indoor-outdoor kid- and dog-friendly café.

Sourcing premium ingredients - like local specialty Reuben Hills coffee, rich and creamy CopperTree Farms Butter and Corman from France, and sustainably-grown stone-milled flour from Wholegrain Milling Co - the pair create a carousel of creative, sensational staples and treats for enjoying on-site or takeaway.

Frenchs Fair is gearing up for their first festive season with delicious pre-order delights like a 14-serve Christmas Trifle made with fresh mango, lemon curd, sponge, vanilla bean Chantilly cream and jelly; fruit mince tarts; Christmas Chai gingerbread to go with their Gingerbread Chai Latte; and a special Pavlova Danish.

Frenchs Fair is located at 7 Skyline Place in Frenchs Forest, and is open Monday to Friday 7am-4pm, and weekends 7am-3pm.
